When it comes to poultry, you can’t get much fresher than Godshall’s. Their chicken and turkey are locally raised, free-range, and delivered straight from the farm to the stand every day. Founded in 1916 by Charles Godshall and passed down two generations to current owner Steve Frankenfield in 1984, Godshall’s has a long reputation for impeccable quality and expert service. In addition to chicken and turkey, they also sell poussins, capons, ducks, geese, and other specialty birds, as well as free-range eggs, house-made chicken and turkey sausage, and cured poultry meats in all shapes and forms. Grab a number (they’re old school that way) and watch as the butchers break down whole birds behind the counter with just a few swipes of the knife. Whether you know exactly what you need or could use some inspiration, the staff at this poultry mecca will put you right at ease and send you on your way.

If you love bacon, be sure to plan a stop at L. Halteman Family Country Foods. The Riehl family, three generations of butchers from Lancaster County, offer no fewer than eight varieties: applewood, pepper, maple glazed, and even those made from beef and turkey. Their most popular is the hickory variety that they smoke themselves, and the smoky flavor doesn’t end there. Pick up ham hocks or turkey wings to flavor a pot of greens, or succulent smoked pork chops to eat with sautéed apples. Besides bacon, the shop offers fresh cuts of prime beef, poultry, and pork—much of it raised in Lancaster County, as well as a selection of Lancaster County preserves, dry goods, and even vegetables in the height of summer. Brothers Jake and Samuel Riehl run the show, but nearly every smiling face behind the counter is a member of their extended Mennonite family.

Since the 1920s, the name Martin’s has meant meat in Philadelphia. Owner Martin Giunta is a third-generation butcher, on both sides of his family! They got their start in South Philly in the Italian Market, but today, the refrigerated cases of their black, white, and red Reading Terminal shop are stocked to the brim with all types of meats: beef, veal, lamb, pork, goat, and even wild game (by special order). You’ll find whole hams, smoked meats, and hard-to-find cuts like pigs’ feet and calves’ liver. More than anything else, though, Martin’s is best known for their fresh, all-natural, preservative-free sausages, all of which they produce themselves in Mickleton, New Jersey. Three generations in and they still use the same, original recipe for their Italian sausage, but they also make a dizzying array to accompany it. Turkey or pork breakfast sausage links fragrant with sage; hot, Italian-style chicken sausage; spiced lamb merguez sausage; beef sausage; and even smoked sausages like Portuguese linguica and German kielbasa. No matter what you’re cooking for dinner, Martin’s can help you with the meat.
